A Father’s Day plan for Cape Town dads who’d rather eat well

This year, perhaps it is something beautifully plated, shared slowly, and enjoyed with a view with absolutely no expectation that Dad must stand over the fire while everyone else calls it a celebration.

For Cape Town families, there are two excellent routes to a Father’s Day win. First, cook him something properly impressive at home, or take him somewhere that has already thought through the food, wine and atmosphere on your behalf.

For the dad who appreciates culinary effort

If Dad is the sort who enjoys good food, talks about “layers of flavour” with a straight face, or has strong opinions about the difference between lunch and a proper lunch, chef Neil Jewell has a Father’s Day-worthy dish that should earn you serious points.

Neil, executive chef of Jewell’s Restaurant at Spice Route Destination in Paarl, has spent more than three decades in hospitality, with a cooking style founded in classic combinations, using seasonal produce to create dishes that allow the hero ingredient to shine. He is also well known for his charcuterie work, which makes his recipe for home-smoked hake, steamed aubergine and Italian crisp feel entirely on brand.

It is not a slapdash Father’s Day fry-up. It is a plate with a little theatre. Think smoky fish, soft aubergine, a charred cabbage wrap and a crisp, salty, crunchy dressing. In other words, something Dad might politely call “very nice” before going back for more.

Smoked hake

Allow approximately 80g of fish per person as a starter.

Ingredients

  • Fresh hake portions

  • 2 litres water
  • 160g salt
  • Method

    1. 1. Place the water and salt in a pot and bring to the boil to make a brine.

  • 2. Allow the brine to cool completely.
  • 3. Pour it over the portioned hake and leave for 20 minutes.
  • 4. Remove the fish from the brine and dry it well.
  • 5. Cold-smoke the fish for at least one hour.
  • Steamed aubergine

    Method

    1. 1. Steam the whole aubergine, skin on, for approximately 16 minutes, depending on its size.

  • 2. Peel the skin away and portion into pieces of roughly 5cm x 3cm, around 30g each.

    • 1½ cups olive oil blend

  • ¾ cup shallot, finely sliced
  • ¼ cup garlic, finely sliced

  • 3 x 12.5ml capers
  • 3 whole anchovy fillets, chopped
  • ⅓ cup red pepper flakes, blitzed to a powder
  • ¼ cup pine kernels
  • 25ml picked thyme leaves
  • 7.5ml sugar
  • 12.5ml salt
  • 2.5ml cracked black pepper
  • Method

    1. 1. Add the shallots to the cold oil and slowly bring up to a medium heat. Cook until lightly golden, then remove, strain and place on a paper towel.

  • 2. Add the garlic to the oil and cook until golden. Remove, strain and place on a paper towel.
  • 3. Add the capers and anchovies to the oil and cook until crispy. Remove and strain on a paper towel.
  • 4. Cool the oil to 100°C, then pour it over the red pepper flakes, salt, cracked black pepper, sugar, pine kernels and thyme leaves.
  • 5. Add the cooked shallots, garlic, capers and anchovies back into the mixture. Stir, taste and adjust seasoning if needed.
  • 6. Serve at room temperature.
  • To serve

    1. 1. Place a portion of fish in a pan and warm it under the grill.

  • 2. Add the aubergine when the fish is almost heated through.
  • 3. Lightly char one Chinese cabbage leaf per portion on a grill pan.
  • 4. Place the leaf in the centre of the plate, top with aubergine and fish, and fold over.
  • 5. Drizzle with a generous tablespoon of Italian crisp and finish with a sprinkle of spekboom leaves.

    Feed Dad well. Give him time. Avoid the novelty aisle. That should do nicely.
